Carrageenan, also known as Irish Moss, Cartilage Seaweed, or Carragheen (from the Irish carraigín, meaning "little stone"), is a red algae of the species Chondrus crispus, traditionally harvested by hand from the wild coasts of Ireland.
The algae is primarily known for its gelling properties and is an excellent natural plant-based thickening agent – a vegan alternative to gelatin.
Uses of Carrageenan (Irish Moss)
Irish Moss is excellent as a natural thickening agent for soups, broths, desserts, plant-based dairy products, puddings, or ice cream. It is therefore a great alternative to gelatin – 100% plant-based.
To use, simply boil some algae in liquid (traditionally about 7 g per 500 ml), then squeeze out the resulting gel and mix it with the liquid. This will be naturally bound and thickened by the carrageenan.
