Sweet Kombu, also known as Sugar Kelp, Royal Kombu, or Sweet Kelp, is a brown algae of the species Saccharina latissima. It grows in the clear, cold waters of the North Atlantic and is one of the mildest and tenderest edible seaweeds.

In flavor, Sugar Kelp is subtle and slightly sweet, with a fine texture. It is excellent as an ingredient in soups, stews, or other savory dishes – also for cooking as an umami carrier, similar to classic Kombu.
