Flakes of Sweet Kombu. This seaweed is also known as Sweet Seaweed, Royal Kombu, or Sweet Kelp, and is a brown algae of the species Saccharina latissima. It grows in the clear, cold waters of the North Atlantic and is one of the mildest and most delicate edible seaweeds.

In flavor, Sweet Seaweed is subtle and slightly sweet, with a fine texture. It is excellent as an ingredient in soups, stews, or other savory dishes – also for cooking as an umami carrier, similar to classic Kombu.
